The purpose of this page is to challenge me to open my eyes and truly see the world which surrounds me. So often we trudge though our daily routine, too busy or preoccupied to notice the little miracles happening all around us. After finding some fresh local fruits and vegetables at the commissary and picking others from the garden this morning, I decided to make these Jalapeno Corn Fritters for dinner.  I was a bit concerned about the spiciness of a whole pepper, but it turned out to be just the right amount of zip!  I topped it with fresh avocado and tomatoes to round out the fresh taste.  I love summertime cooking in the Pacific Northwest!
